Description

This Healthy Asparagus Mushroom Pasta is a cozy, nourishing dish packed with fresh vegetables, light cream, and vibrant flavors. Perfect for a quick weeknight dinner or a comforting weekend meal, it’s simple, wholesome, and utterly delicious.


Ingredients

  • 300g whole wheat spaghetti
  • 250g fresh asparagus, trimmed and cut into 2-inch pieces
  • 200g button mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 50ml vegetable broth
  • 50ml unsweetened plant-based cream or light cream
  • 1 teaspoon lemon zest
  • 2 tablespoons grated parmesan (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook pasta in salted water until al dente; reserve ½ cup pasta water, then drain.
  2. Heat olive oil in a skillet; sauté garlic and onion until soft and fragrant.
  3. Add mushrooms, cook until golden brown, about 5–7 minutes.
  4. Add asparagus and cook 3–4 minutes until crisp-tender.
  5. Pour in vegetable broth and cream; simmer 2–3 minutes.
  6. Toss in pasta, adding reserved water if needed to loosen sauce.
  7. Season with salt, pepper, and lemon zest; toss well.
  8. Top with parmesan (optional) and parsley before serving.
