Description

This Healthy Asparagus Quiche is light, creamy, and perfect for brunch or a wholesome dinner. Fresh asparagus combines with eggs, Greek yogurt, and cheese in a delicious whole-wheat crust. The result is a nourishing, flavorful quiche that feels comforting yet healthy.


Ingredients

  • 1 whole wheat pie crust
  • 1 bunch asparagus, chopped
  • 4 large eggs
  • 1 cup Greek yogurt
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/4 tsp paprika

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Place pie crust in a 9-inch pie dish.
  3. Heat olive oil in a skillet and sauté onion until soft.
  4. Add garlic and asparagus and cook 3 minutes.
  5. Whisk eggs, yogurt, and milk together.
  6. Stir in cheese and seasonings.
  7. Spread vegetables into crust.
  8. Pour egg mixture over vegetables.
  9. Bake for 35-40 minutes until center is set.
  10. Cool for 10 minutes before slicing and serving.

Notes

Use fresh asparagus for best flavor. Substitute spinach or mushrooms if desired. Store leftovers in the refrigerator for up to 4 days and reheat gently in the oven.
