Ingredients

  • 3 overripe bananas, mashed
  • 2 large eggs
  • 1/4 cup plain Greek yogurt
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 3/4 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. Preheat oven to 175°C (350°F). Grease a 9×5-inch loaf pan.
  2. Mash bananas in a large bowl.
  3. Mix in eggs, Greek yogurt, coconut oil, honey, and vanilla.
  4. Combine flour, baking soda, baking powder, salt, and cinnamon in a separate bowl.
  5. Fold dry ingredients into wet mixture until just combined.
  6. Add walnuts or chocolate chips if desired.
  7. Pour batter into loaf pan and smooth top.
  8. Bake 50-60 min until a toothpick comes out clean.
  9. Cool in pan 10 min, then transfer to wire rack.

Notes

Use very ripe bananas for natural sweetness. Substitute coconut oil with olive oil or unsweetened applesauce. Freeze leftover slices for a quick snack. Do not overmix batter to keep bread tender.
