Description

My Healthy Chicken Noodle Soup is a cozy, nourishing classic with tender chicken, wholesome noodles, and fresh vegetables. Perfect for family dinners or make-ahead lunches, it’s simple, healthy, and brimming with love.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 3 medium carrots, sliced
  • 3 celery sticks, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 8 cups low-sodium chicken broth
  • 2 cups cooked chicken, shredded
  • 150g whole wheat egg noodles
  • Salt and pepper to taste
  • Juice of ½ lemon
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot. Sauté onions and garlic until fragrant and translucent.
  2. Add carrots, celery, thyme, parsley, and bay leaf. Cook for 3–4 minutes.
  3. Pour in chicken broth and bring to a gentle boil.
  4. Add shredded chicken and simmer for 20–25 minutes.
  5. Add noodles in the last 8–10 minutes. Stir occasionally.
  6. Season with salt, pepper, and lemon juice. Remove bay leaf.
  7. Garnish with fresh parsley and serve warm.

Notes

Use homemade or high-quality low-sodium broth. Poaching chicken in the broth adds extra flavor. Add lemon juice at the end for brightness. Cook noodles last to avoid sogginess.
