- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 3 medium carrots, sliced
- 3 celery sticks, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf
- 8 cups low-sodium chicken broth
- 2 cups cooked chicken, shredded
- 150g whole wheat egg noodles
- Salt and pepper to taste
- Juice of ½ lemon
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot. Sauté onions and garlic until fragrant and translucent.
- Add carrots, celery, thyme, parsley, and bay leaf. Cook for 3–4 minutes.
- Pour in chicken broth and bring to a gentle boil.
- Add shredded chicken and simmer for 20–25 minutes.
- Add noodles in the last 8–10 minutes. Stir occasionally.
- Season with salt, pepper, and lemon juice. Remove bay leaf.
- Garnish with fresh parsley and serve warm.
Notes
Use homemade or high-quality low-sodium broth. Poaching chicken in the broth adds extra flavor. Add lemon juice at the end for brightness. Cook noodles last to avoid sogginess.
