Description

This Healthy Cucumber Dill Salad is fresh, crisp, and refreshing. Made with thinly sliced cucumbers, red onion, yogurt, lemon juice, and fresh dill, it’s a light and easy side dish ready in under 15 minutes.


Ingredients

2 large cucumbers, thinly sliced ½ red onion, thinly sliced 3 tbsp fresh dill, finely chopped 2 tbsp fresh lemon juice 3 tbsp Greek yogurt 1 tbsp olive oil ½ tsp salt ¼ tsp black pepper


Instructions

1. Wash and thinly slice cucumbers. 2. Thinly slice red onion and optionally soak in cold water for 5 minutes. 3. Combine cucumbers, red onion, and dill in a large bowl. 4. Whisk together Greek yogurt, olive oil, lemon juice, salt, and pepper. 5. Pour dressing over cucumber mixture and toss gently. 6. Taste and adjust seasoning if needed. 7. Chill for 10–15 minutes before serving. 8. Garnish with extra dill if desired.


Notes

Chill to meld flavors. Dress just before serving for best texture. Add mint or garlic powder for variation. Do not freeze.
