Description

My Healthy Lemon Chicken Salad is fresh, zesty, and packed with protein. Tender chicken, crisp greens, cherry tomatoes, cucumber, and red onion are tossed in a bright lemon dressing for a light, satisfying meal perfect for lunch or dinner.


Ingredients

  • 2 large chicken breasts, skinless and boneless
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 tsp garlic powder
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • ½ red onion, thinly sliced
  • ½ avocado, sliced (optional)
  • ¼ cup crumbled feta cheese (optional)
  • 2 tbsp chopped fresh parsley
  • Lemon Dressing: 3 tbsp fresh lemon juice, 2 tbsp olive oil, 1 tsp Dijon mustard, 1 tsp honey or maple syrup, salt and pepper to taste

Instructions

  1. Rub chicken breasts with olive oil, garlic powder, salt, and pepper.
  2. Cook chicken in a skillet 5–7 minutes per side until fully cooked. Rest 5 minutes, then slice.
  3. Combine salad greens, cherry tomatoes, cucumber, red onion, and avocado in a large bowl.
  4. Whisk together lemon juice, olive oil, Dijon mustard, honey, salt, and pepper for dressing.
  5. Top salad with sliced chicken, feta, and parsley. Drizzle dressing and toss gently.
  6. Serve immediately.

Notes

Marinate chicken for extra flavor. Keep dressing separate if storing for later. Optional toppings: nuts, avocado, or feta.
