My Healthy Lemon Chicken Salad is fresh, zesty, and packed with protein. Tender chicken, crisp greens, cherry tomatoes, cucumber, and red onion are tossed in a bright lemon dressing for a light, satisfying meal perfect for lunch or dinner.
Ingredients

- 2 large chicken breasts, skinless and boneless
- 1 tbsp olive oil
- Salt and black pepper, to taste
- 1 tsp garlic powder
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, thinly sliced
- ½ red onion, thinly sliced
- ½ avocado, sliced (optional)
- ¼ cup crumbled feta cheese (optional)
- 2 tbsp chopped fresh parsley
- Lemon Dressing: 3 tbsp fresh lemon juice, 2 tbsp olive oil, 1 tsp Dijon mustard, 1 tsp honey or maple syrup, salt and pepper to taste
Instructions
- Rub chicken breasts with olive oil, garlic powder, salt, and pepper.
- Cook chicken in a skillet 5–7 minutes per side until fully cooked. Rest 5 minutes, then slice.
- Combine salad greens, cherry tomatoes, cucumber, red onion, and avocado in a large bowl.
- Whisk together lemon juice, olive oil, Dijon mustard, honey, salt, and pepper for dressing.
- Top salad with sliced chicken, feta, and parsley. Drizzle dressing and toss gently.
- Serve immediately.
Notes
Marinate chicken for extra flavor. Keep dressing separate if storing for later. Optional toppings: nuts, avocado, or feta.
