- 6 cups fresh baby spinach, washed and dried
- 2 cups hulled and sliced fresh strawberries
- 1/2 cup sliced almonds, lightly toasted
- 1/4 cup crumbled feta cheese (optional)
- 1/2 small red onion, thinly sliced
- 1/2 cup poppy seeds
- 1/2 cup Greek yogurt
- 3 tablespoons honey
- 2 tablespoons apple cider vinegar
- 1/4 cup extra virgin olive oil
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Wash and dry spinach, slice strawberries and red onion, and toast almonds.
- Whisk Greek yogurt, honey, apple cider vinegar, olive oil, Dijon mustard, salt, pepper, and poppy seeds until smooth.
- Combine spinach, strawberries, red onion, and almonds in a large bowl.
- Drizzle dressing over salad and toss gently to coat.
- Sprinkle feta on top (optional) and serve immediately.
Notes
Toast almonds for extra crunch. Adjust honey for sweeter dressing. Add dressing just before serving to keep salad crisp. Grilled chicken or salmon can be added for a main course.
