- 500g ground beef
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 400g canned chopped tomatoes
- 2 tablespoons tomato paste
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 250ml beef stock
- 2 teaspoons chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Fresh coriander or parsley for garnish
Instructions
- Heat olive oil, sauté onions and garlic until soft.
- Brown ground beef, breaking it up with a spoon.
- Add bell peppers and cook 2–3 minutes.
- Stir in spices, toast 30 seconds.
- Add tomato paste, chopped tomatoes, and beef stock. Mix well.
- Simmer 20 minutes, uncovered.
- Add beans and simmer another 15 minutes.
- Season to taste and garnish before serving.
Notes
Brown beef for richer flavor. Toast spices for enhanced aroma. Make ahead for deeper flavor; refrigerate or freeze leftovers. Serve with cheese, sour cream, or crusty bread.
