Description

Ingredients

  • 500g ground beef
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 400g canned chopped tomatoes
  • 2 tablespoons tomato paste
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 250ml beef stock
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh coriander or parsley for garnish

Instructions

  1. Heat olive oil, sauté onions and garlic until soft.
  2. Brown ground beef, breaking it up with a spoon.
  3. Add bell peppers and cook 2–3 minutes.
  4. Stir in spices, toast 30 seconds.
  5. Add tomato paste, chopped tomatoes, and beef stock. Mix well.
  6. Simmer 20 minutes, uncovered.
  7. Add beans and simmer another 15 minutes.
  8. Season to taste and garnish before serving.

Notes

Brown beef for richer flavor. Toast spices for enhanced aroma. Make ahead for deeper flavor; refrigerate or freeze leftovers. Serve with cheese, sour cream, or crusty bread.
