- 1 lb (450g) ground beef
- 1 large onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can (400g) diced tomatoes
- 1 can (400g) kidney beans, drained and rinsed
- 1 can (400g) black beans, drained and rinsed
- 2 tbsp tomato paste
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- 1/2 tsp ground black pepper
- 1 tsp salt
- 1 cup beef broth
- 2 tbsp olive oil
- Fresh coriander/cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions until translucent.
- Add garlic, cook 1-2 minutes.
- Brown ground beef, breaking it up.
- Add bell peppers, cook 5 minutes.
- Stir in tomato paste, tomatoes, and spices.
- Pour in beef broth, simmer 30-40 minutes.
- Add beans, simmer 10 more minutes. Adjust seasoning.
- Garnish with fresh coriander and serve.
Notes
Browning beef adds depth of flavor. Simmering slowly enhances richness. Can make ahead; tastes better next day. Freeze in portions for later meals.
