Description

This Hearty Beef Chili Recipe is my go-to comfort food, featuring tender ground beef, kidney and black beans, bell peppers, and a blend of warming spices. Perfect for cozy family dinners or meal prep, it’s filling, flavorful, and full of love.


Ingredients

  • 1 lb (450g) ground beef
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (400g) diced tomatoes
  • 1 can (400g) kidney beans, drained and rinsed
  • 1 can (400g) black beans, drained and rinsed
  • 2 tbsp tomato paste
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground black pepper
  • 1 tsp salt
  • 1 cup beef broth
  • 2 tbsp olive oil
  • Fresh coriander/cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions until translucent.
  2. Add garlic, cook 1-2 minutes.
  3. Brown ground beef, breaking it up.
  4. Add bell peppers, cook 5 minutes.
  5. Stir in tomato paste, tomatoes, and spices.
  6. Pour in beef broth, simmer 30-40 minutes.
  7. Add beans, simmer 10 more minutes. Adjust seasoning.
  8. Garnish with fresh coriander and serve.

Notes

Browning beef adds depth of flavor. Simmering slowly enhances richness. Can make ahead; tastes better next day. Freeze in portions for later meals.
