- 1 pie crust (9 inch)
- 1 bunch asparagus (200 g)
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup milk
- 1 cup shredded Gruyère cheese
- 1/4 cup grated Parmesan cheese
- 1 small onion, chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- Preheat oven to 375°F (190°C).
- Place pie crust in a pie dish and pre-bake for 10 minutes.
- Sauté chopped onion in olive oil until soft.
- Blanch asparagus for 1 minute and cut into pieces.
- Whisk eggs, cream, milk, salt, pepper, and nutmeg.
- Stir in cheese and sautéed onion.
- Spread asparagus in crust.
- Pour egg mixture over asparagus.
- Bake for 35–40 minutes until set.
- Cool slightly before slicing.
Notes
Use fresh asparagus for the best flavor. You can substitute Swiss cheese or feta if desired. Let the quiche rest before slicing so the filling sets nicely.
