Ingredients

  • 3 overripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat oven to 175°C (350°F) and grease a 9×5-inch loaf pan.
  2. Mash bananas in a large bowl, then stir in melted butter, brown sugar, eggs, and vanilla extract.
  3. In another bowl, mix flour, baking soda, salt, and cinnamon.
  4. Gently fold dry ingredients into wet ingredients until just combined.
  5. Fold in walnuts or chocolate chips if desired.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake 55–65 minutes until a toothpick comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

Use heavily overripe bananas for best flavor. Do not overmix to keep bread tender. Chocolate chips or nuts add texture. Store in an airtight container for up to 4 days or freeze for longer storage.
