- 1 tbsp olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 500g ground beef
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 large carrot, diced
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp cayenne pepper (optional)
- 400g canned chopped tomatoes
- 2 tbsp tomato paste
- 400g canned kidney beans, drained and rinsed
- 300ml beef stock
- 1 tsp brown sugar
- Salt and pepper, to taste
- Fresh coriander or parsley, for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions and garlic until soft.
- Add ground beef, cook until browned.
- Stir in bell peppers and carrot, cook 5 minutes.
- Add spices and stir to coat.
- Mix in chopped tomatoes, tomato paste, beans, beef stock, and sugar.
- Simmer on low for 45–50 minutes, stirring occasionally.
- Season with salt and pepper. Garnish with coriander and serve hot.
Notes
Brown beef well for deep flavor. Adjust chili to taste. Perfect for make-ahead meals and freezes beautifully.
