- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- ½ tsp garlic powder
- ½ tsp paprika
- 1 tsp dried oregano
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- Fresh basil leaves, for garnish
Instructions
- Season and pound chicken to ½ inch thickness.
- Dredge in flour, then egg, then breadcrumb mixture. Repeat for extra crunch.
- Heat olive oil and butter in skillet. Pan-fry chicken 3–4 mins per side.
- Preheat oven to 375°F (190°C). Spread marinara in baking dish, place chicken, spoon sauce on top, sprinkle with mozzarella and Parmesan.
- Bake 20–25 mins until cheese is bubbly and chicken reaches 165°F (74°C).
- Garnish with basil and let rest 5 mins before serving.
Notes
Double-bread for extra crispiness. Warm sauce before adding to chicken. Leftovers keep 3 days in fridge; reheat in oven.
