Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 1 tsp dried oregano
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • Fresh basil leaves, for garnish

Instructions

  1. Season and pound chicken to ½ inch thickness.
  2. Dredge in flour, then egg, then breadcrumb mixture. Repeat for extra crunch.
  3. Heat olive oil and butter in skillet. Pan-fry chicken 3–4 mins per side.
  4. Preheat oven to 375°F (190°C). Spread marinara in baking dish, place chicken, spoon sauce on top, sprinkle with mozzarella and Parmesan.
  5. Bake 20–25 mins until cheese is bubbly and chicken reaches 165°F (74°C).
  6. Garnish with basil and let rest 5 mins before serving.

Notes

Double-bread for extra crispiness. Warm sauce before adding to chicken. Leftovers keep 3 days in fridge; reheat in oven.
