Ingredients

  • 1.5 kg waxy potatoes, peeled and chopped
  • 3 large eggs
  • 1 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chopped celery
  • 1/4 cup chopped red onion
  • 2 tbsp chopped fresh parsley

Instructions
