  • 6 cups fresh baby spinach, washed and dried
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup sliced almonds, toasted
  • 1/4 cup red onion, thinly sliced (optional)
  • 1/3 cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons honey
  • 2 tablespoons sugar
  • 1 tablespoon poppy seeds
  • 1/4 teaspoon salt

Instructions

  1. Wash and dry baby spinach, place in a large salad bowl.
  2. Hull and slice strawberries thinly.
  3. Toast sliced almonds in a dry skillet over medium heat for 3–4 minutes, let cool.
  4. Whisk together mayonnaise, apple cider vinegar, honey, sugar, poppy seeds, and salt until smooth.
  5. Add strawberries, almonds, and red onion to the spinach. Drizzle dressing and toss gently.
