- 1/4 cup fresh basil leaves, torn
- 2 cups mixed salad greens
- 1/4 cup feta cheese, crumbled (optional)
- 1 lemon, zested and juiced
- 3 tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- Salt and freshly ground black pepper to taste
Instructions
- Cook or prep chicken, then slice thinly.
- Prepare vegetables: cherry tomatoes, cucumber, red onion, and torn basil leaves.
- Whisk lemon juice, zest, olive oil, Dijon mustard, salt, and pepper for the dressing.
- Layer salad greens, vegetables, and chicken in a bowl.
- Drizzle dressing and toss gently.
- Finish with torn basil leaves and crumbled feta.
- Serve immediately.
Notes
Tear basil by hand to preserve aroma. Dressing can be made ahead. Salad is best served fresh; store ingredients separately if prepping in advance.
