- 2 chicken breasts, sliced
- 1 medium zucchini, spiralized
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- ½ tsp paprika
- Salt and pepper, to taste
- 2 tbsp grated parmesan
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken with paprika, salt, and pepper. Cook until golden and fully cooked.
- Remove chicken and set aside.
- In the same skillet, sauté garlic for 1 minute, then add broccoli and bell pepper. Cook until tender.
- Add zucchini noodles and toss for 2–3 minutes.
- Return chicken to the skillet, combine everything, and sprinkle with parmesan.
- Garnish with fresh parsley and serve warm.
Notes
Swap zucchini noodles for spaghetti squash if desired. Use shrimp or turkey instead of chicken for variety. Store in airtight containers for up to 4 days. Reheat gently to preserve texture.
