Ingredients

  • 500g boneless, skinless chicken breast
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 200g cherry tomatoes
  • 2 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 tbsp fresh lemon juice
  • 50g feta cheese (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 200°C (390°F).
  2. Season chicken with paprika, salt, and pepper.
  3. Sear chicken in 1 tbsp olive oil until golden brown. Remove.
  4. Toss vegetables with remaining olive oil, oregano, salt, and pepper.
  5. Place chicken on top of vegetables in a baking dish. Drizzle lemon juice.
  6. Roast 20–25 min until chicken is cooked and vegetables are tender.
  7. Optional: sprinkle feta and roast 3 more minutes.
  8. Garnish with parsley and serve.

Notes

Pat chicken dry for better sear. Roast vegetables at high heat for caramelization. Store leftovers in fridge up to 3 days.
