- 2 large chicken breasts or thighs, skinless
- 1 medium zucchini, sliced thinly
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 2 cups broccoli florets
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 200°C (400°F).
- Season chicken with salt, pepper, smoked paprika, and oregano.
- Toss zucchini, bell peppers, and broccoli with olive oil, garlic, salt, and pepper.
- Arrange vegetables and chicken on a baking sheet.
- Roast for 20–25 minutes.
- Sprinkle Parmesan over vegetables in the last 5 minutes.
- Remove from oven and rest 5 minutes.
- Garnish with parsley and serve warm.
Notes
