- 180g unsalted butter
- 200g white chocolate, chopped
- 3 large eggs
- 200g caster sugar
- 1 tsp vanilla extract
- 120g plain flour
- 2 tbsp matcha green tea powder
- 1/4 tsp salt
Instructions
- Preheat oven to 180°C (350°F) and line an 8-inch square pan with parchment.
- Melt butter and half the chocolate chunks over simmering water; let cool slightly.
- Whisk eggs and sugar until pale and fluffy, then add vanilla extract.
- Fold melted butter mixture into eggs gently.
- Sift in flour, matcha, and salt; fold until just combined.
- Fold in remaining white chocolate chunks.
- Pour batter into pan and smooth the top.
- Bake 25–28 minutes until edges set, center slightly soft.
- Cool completely before cutting into squares.
Notes
Sift matcha powder for smooth color. Use high-quality white chocolate chunks. Do not overbake; center should stay slightly soft.
