- 1 cup unsalted butter, melted
- 1 ½ cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- ½ cup all-purpose flour
- ½ cup glutinous rice flour
- ¼ cup cocoa powder
- 1 tbsp matcha powder
- ¼ tsp salt
- ½ cup white chocolate chips (optional)
- 1 cup powdered sugar (for glaze)
- 1–2 tsp matcha powder (for glaze)
- 2–3 tbsp milk (for glaze)
- ½ tsp vanilla extract (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
- Whisk melted butter and sugar together; add eggs one at a time and vanilla.
- Sift flour, glutinous rice flour, cocoa, matcha, and salt into a bowl.
- Gently fold dry ingredients into wet; add white chocolate chips if using.
- Pour batter into prepared pan and spread evenly.
- Bake 30–35 minutes until toothpick comes out with moist crumbs.
- Cool completely before glazing.
- Mix powdered sugar, matcha, milk, and vanilla for glaze.
- Drizzle glaze over cooled brownies and let set 15–20 minutes.
- Cut into squares and enjoy.
Notes
Sift matcha powder to avoid lumps. Do not overmix mochi batter for the best chewiness. Store brownies in airtight containers at room temperature for 2 days, in the refrigerator for up to 5 days, or freeze for longer storage.
