Description

These Matcha Mochi Brownies with Sweet Red Bean are soft, chewy, and full of flavor. The earthy matcha pairs perfectly with fudgy brownie texture and sweet red bean paste, creating a comforting Japanese-inspired treat that’s perfect for sharing or enjoying with a cup of tea.


Ingredients

  • 150g unsalted butter, melted
  • 200g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 80g all-purpose flour
  • 40g glutinous rice flour
  • 2 tbsp matcha green tea powder
  • 50g cocoa powder
  • 100g white chocolate, chopped
  • 150g sweet red bean paste (anko)
  • 50ml milk
  • Pinch of salt

Instructions

  1. Preheat oven to 180°C (350°F) and line a square baking pan with parchment paper.
  2. Melt butter in a small saucepan and let cool slightly.
  3. Whisk sugar, eggs, and vanilla until pale and fluffy.
  4. Slowly add melted butter, whisking constantly.
  5. Sift together flours, matcha, cocoa, and salt.
  6. Fold dry ingredients into wet ingredients gently.
  7. Mix in white chocolate and milk for a smooth batter.
  8. Layer half the batter in pan, dollop red bean paste, then cover with remaining batter and swirl.
  9. Bake 25–30 minutes until toothpick comes out mostly clean.
  10. Cool completely before cutting into squares.

Notes

Use high-quality matcha for best color and flavor. Fold mochi gently to maintain chewiness. Store in airtight container at room temperature up to 3 days, or freeze for up to 2 months.
