- 1 cup (225g) unsalted butter, melted
- 1 1/4 cups (250g) granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup (95g) all-purpose flour
- 1/2 cup (60g) glutinous rice flour
- 1/2 cup (45g) unsweetened cocoa powder
- 2 tablespoons matcha powder
- 1/4 teaspoon salt
- 1/2 cup (90g) white chocolate chips or chunks (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- Melt butter and whisk in sugar until glossy.
- Add eggs and vanilla, whisking until smooth.
- Sift together flours, cocoa, matcha, and salt.
- Gently fold dry ingredients into wet until just combined.
- Stir in white chocolate chunks if using.
- Pour batter into pan and smooth top.
- Bake 25–30 minutes until edges are set.
- Cool completely before cutting.
Notes
Do not overmix the batter to maintain the chewy texture. Use high-quality matcha for the best flavor. Can be stored at room temperature, in the fridge, or frozen for later.
