- 1 large egg
- 1 tsp vanilla extract
- 1 tsp red food coloring

Instructions
- Preheat mini waffle iron and grease with oil or non-stick spray.
- Whisk flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl.
- In another bowl, whisk buttermilk, oil, egg, vanilla, and red food coloring until smooth.
- Fold wet ingredients into dry ingredients gently; small lumps are fine.
- Spoon batter into waffle iron, filling each cavity 3/4 full.
- Cook 3–4 minutes until crisp outside and springy inside.
- Remove carefully, repeat until all batter is used.
- Serve warm with cream cheese frosting, berries, or syrup.
Notes
Don’t overmix batter; it keeps waffles tender. Use mini ice cream scoop for uniform size. Freeze cooled waffles for up to 1 month. Reheat in toaster or oven to crisp edges.
