- 3 very ripe bananas, mashed
- 100g unsalted butter, melted
- 150g brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 190g all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp cinnamon (optional)
- 50g chopped walnuts or pecans (optional)
- 50g chocolate chips (optional)
Instructions
- Preheat oven to 175°C (350°F) and grease a 9×5-inch loaf pan.
- Mash bananas in a large bowl until smooth.
- Mix in melted butter, brown sugar, eggs, and vanilla.
- Whisk flour, baking soda, salt, and cinnamon in a separate bowl.
- Fold dry ingredients into the banana mixture gently.
- Add walnuts and/or chocolate chips if using.
- Pour batter into pan and smooth the top.
- Bake 55–65 minutes, or until a toothpick comes out clean.
- Cool 10 minutes in pan, then transfer to a wire rack.
Notes
Use overripe bananas for maximum sweetness. Don’t overmix the batter for a tender crumb. Yogurt or sour cream keeps bread extra moist. Store in airtight container; freezes well.
