- 250g digestive biscuits, crushed
- 100g unsalted butter, melted
- 900g cream cheese, room temperature
- 200g granulated sugar
- 3 eggs, room temperature
- 200ml sour cream, room temperature
- 1 tsp vanilla extract
- 1 tbsp all-purpose flour
- Zest of 1 lemon
Instructions
- Preheat oven to 160°C. Wrap 23cm springform pan with foil.
- Mix biscuits with butter and press into pan. Chill 10 min.
- Beat cream cheese until smooth. Add sugar gradually.
- Add eggs one at a time, mixing gently.
- Fold in sour cream, vanilla, flour, and lemon zest.
- Pour over crust, smooth top.
- Place in water bath and bake 60–70 min.
- Cool in oven 1 hour, then chill 4+ hours.
Notes
Use full-fat cream cheese for best texture. Avoid over-beating to prevent cracks. Top with berries or chocolate ganache for extra flair.
