- 200g digestive biscuits
- 100g butter (melted)
- 1 tbsp sugar
- 250g cream cheese
- 200ml heavy cream
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 300g strawberries
- 2 tbsp strawberry jam
Instructions
- Crush biscuits finely.
- Mix with melted butter and sugar.
- Press into tart pan and chill.
- Beat cream cheese until smooth.
- Add sugar, vanilla, lemon juice.
- Whip cream to soft peaks.
- Fold into cream cheese mixture.
- Spread over crust.
- Top with sliced strawberries.
- Brush with jam and chill 3 hours.
Notes
Always chill before serving. You can swap strawberries with other berries. Add lemon zest for extra freshness.
