- 3 very ripe bananas, mashed
- 75g melted unsalted butter
- 150g granulated sugar
- 1 large egg, beaten
- 1 tsp vanilla extract
- 1 tsp baking soda
- Pinch of salt
- 190g all-purpose flour
- Optional: 50g chopped walnuts or chocolate chips
Instructions
- Preheat oven to 175°C (350°F) and grease a 9×5 inch loaf pan.
- Mash bananas in a large bowl until smooth.
- Stir in melted butter, sugar, egg, and vanilla until combined.
- Add baking soda and salt, then fold in flour gently.
- Fold in walnuts or chocolate chips if using.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake 55–65 minutes until a toothpick comes out clean.
- Cool in the pan 10 minutes, then transfer to a wire rack.
Notes
Use very ripe bananas for natural sweetness. Avoid overmixing to keep bread tender. Freeze slices for up to 3 months.
