Description

Warm up your evenings with my One Pot Beef Chili! This easy, hearty chili is packed with tender beef, beans, and rich tomato sauce, perfect for family dinners or casual gatherings. Full of flavor and comfort, it’s a recipe everyone will love.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 500g ground beef
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 400g can chopped tomatoes
  • 2 tablespoons tomato paste
  • 400g can red kidney beans, drained and rinsed
  • 400g can black beans, drained and rinsed
  • 250ml beef stock
  • 1 teaspoon brown sugar
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic; sauté until translucent.
  2. Add bell peppers and cook 3–4 minutes.
  3. Brown ground beef, breaking it up with a spoon.
  4. Add spices (paprika, cumin, chili powder, oregano, salt, pepper) and stir well.
  5. Add chopped tomatoes, tomato paste, and beef stock; stir to combine.
  6. Mix in kidney beans and black beans.
  7. Bring to a gentle boil, then reduce heat and simmer 30–40 minutes.
  8. Taste and adjust seasoning as needed.
  9. Serve hot with toppings of choice.

Notes

  • Brown beef properly for richer flavor.
  • Simmering longer deepens flavors.
  • Add a splash of stock when reheating if too thick.
  • Freezes well for up to 3 months.
