- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 500g ground beef
- 2 teaspoons smoked paprika
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 400g can chopped tomatoes
- 2 tablespoons tomato paste
- 400g can red kidney beans, drained and rinsed
- 400g can black beans, drained and rinsed
- 250ml beef stock
- 1 teaspoon brown sugar
- Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and garlic; sauté until translucent.
- Add bell peppers and cook 3–4 minutes.
- Brown ground beef, breaking it up with a spoon.
- Add spices (paprika, cumin, chili powder, oregano, salt, pepper) and stir well.
- Add chopped tomatoes, tomato paste, and beef stock; stir to combine.
- Mix in kidney beans and black beans.
- Bring to a gentle boil, then reduce heat and simmer 30–40 minutes.
- Taste and adjust seasoning as needed.
- Serve hot with toppings of choice.
Notes
- Brown beef properly for richer flavor.
- Simmering longer deepens flavors.
- Add a splash of stock when reheating if too thick.
- Freezes well for up to 3 months.
