- 200g plain flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 150g granulated sugar
- 2 large eggs, at room temperature
- 120ml vegetable oil
- 120ml freshly squeezed orange juice
- Zest of 2 medium oranges
- 1 tsp vanilla extract
- For the glaze: 100g icing sugar, 2–3 tbsp freshly squeezed orange juice
Instructions
- Preheat oven to 180°C (350°F) and line a 9×5-inch loaf tin with parchment paper.
- Sift together flour, baking powder, baking soda, and salt.
- In a large bowl, whisk sugar, eggs, and oil until smooth. Add orange juice, zest, and vanilla.
- Fold dry ingredients gently into wet ingredients.
- Pour batter into prepared tin and smooth the top.
- Bake 45–50 minutes until a skewer comes out clean.
- Cool completely on a wire rack.
- Mix icing sugar with orange juice and drizzle over cooled cake.
Notes
Use room-temperature eggs for a better rise. Don’t overmix batter to keep the cake light. Store in an airtight container for 2–3 days or freeze unglazed for 2 months. Reheat slices in the microwave for 15–20 seconds for a fresh-baked feel.
