Description

Ingredients

  • 200g plain flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 150g granulated sugar
  • 2 large eggs, at room temperature
  • 120ml vegetable oil
  • 120ml freshly squeezed orange juice
  • Zest of 2 medium oranges
  • 1 tsp vanilla extract
  • For the glaze: 100g icing sugar, 2–3 tbsp freshly squeezed orange juice

Instructions

  1. Preheat oven to 180°C (350°F) and line a 9×5-inch loaf tin with parchment paper.
  2. Sift together flour, baking powder, baking soda, and salt.
  3. In a large bowl, whisk sugar, eggs, and oil until smooth. Add orange juice, zest, and vanilla.
  4. Fold dry ingredients gently into wet ingredients.
  5. Pour batter into prepared tin and smooth the top.
  6. Bake 45–50 minutes until a skewer comes out clean.
  7. Cool completely on a wire rack.
  8. Mix icing sugar with orange juice and drizzle over cooled cake.

Notes

Use room-temperature eggs for a better rise. Don’t overmix batter to keep the cake light. Store in an airtight container for 2–3 days or freeze unglazed for 2 months. Reheat slices in the microwave for 15–20 seconds for a fresh-baked feel.
