- 300g fettuccine or pasta of choice
- 2 chicken breasts, sliced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1 cup freshly grated Parmesan cheese
- Salt and pepper, to taste
- 1/4 tsp nutmeg (optional)
- Fresh parsley, chopped
Instructions
- Cook pasta until al dente; drain, reserving 1/4 cup pasta water.
- Sauté chicken in olive oil until golden and cooked; remove from skillet.
- Melt butter in the same skillet, add garlic, cook 1 minute.
- Stir in heavy cream, simmer 2-3 minutes.
- Gradually whisk in Parmesan cheese; add nutmeg.
- Return chicken to skillet, stir to coat in sauce.
- Add pasta, toss with sauce, loosen with reserved water if needed.
- Season with salt and pepper; garnish with parsley.
