- 2 large chicken breasts, butterflied
- Salt and pepper, to taste
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko preferred)
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried Italian herbs
- ½ cup olive oil
- 1 ½ cups marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, for garnish
Instructions
- Preheat oven to 200°C (400°F).
- Season chicken with salt and pepper.
- Prepare breading station: flour, eggs, breadcrumb-Parmesan mix.
- Dredge chicken in flour, then egg, then breadcrumb mixture.
- Fry chicken 3-4 minutes per side until golden.
- Transfer to baking dish; spoon marinara over chicken.
- Sprinkle mozzarella on top; bake 15-20 minutes until bubbly.
- Garnish with basil and serve.
Notes
Pound chicken for even cooking. Use panko breadcrumbs for extra crunch. Make ahead by preparing chicken and sauce; assemble before baking.
