Description

This Rainbow Jello Poke Cake is a fun, colorful dessert with soft white cake and vibrant gelatin layers. Perfect for parties, birthdays, or any time you want a playful, delicious treat.


Ingredients

  • 250g unsalted butter, softened
  • 250g granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 300g plain flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 120ml whole milk
  • 1 box each: red, orange, yellow, green, blue, purple gelatin
  • 250ml boiling water per gelatin box
  • 250ml cold water per gelatin box
  • 300ml heavy cream (optional)
  • 2 tablespoons powdered sugar (optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 175°C and grease a 9×13-inch pan.
  2. Cream butter and sugar until pale and fluffy.
  3. Add eggs one at a time, then stir in vanilla extract.
  4. Whisk flour, baking powder, and salt together.
  5. Alternate adding dry ingredients and milk.
  6. Pour batter into pan and bake 35–40 minutes.
  7. Cool completely, then poke holes with a spoon handle.
  8. Prepare red gelatin, pour over cake, and chill until set.
  9. Repeat with orange, yellow, green, blue, purple layers, chilling each until firm.
  10. Optional: top with whipped cream before serving.

Notes

Use a spoon handle to poke holes evenly. Chill each gelatin layer until firm before adding the next. Store in the fridge for up to 4 days. Do not freeze.
