This Rainbow Jello Poke Cake is a fun, colorful dessert with soft white cake and vibrant gelatin layers. Perfect for parties, birthdays, or any time you want a playful, delicious treat.

- 250g unsalted butter, softened
- 250g granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 300g plain flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- 120ml whole milk
- 1 box each: red, orange, yellow, green, blue, purple gelatin
- 250ml boiling water per gelatin box
- 250ml cold water per gelatin box
- 300ml heavy cream (optional)
- 2 tablespoons powdered sugar (optional)
- 1 teaspoon vanilla extract (optional)
Instructions
- Preheat oven to 175°C and grease a 9×13-inch pan.
- Cream butter and sugar until pale and fluffy.
- Add eggs one at a time, then stir in vanilla extract.
- Whisk flour, baking powder, and salt together.
- Alternate adding dry ingredients and milk.
- Pour batter into pan and bake 35–40 minutes.
- Cool completely, then poke holes with a spoon handle.
- Prepare red gelatin, pour over cake, and chill until set.
- Repeat with orange, yellow, green, blue, purple layers, chilling each until firm.
- Optional: top with whipped cream before serving.
Notes
Use a spoon handle to poke holes evenly. Chill each gelatin layer until firm before adding the next. Store in the fridge for up to 4 days. Do not freeze.
