- 1 pound (450g) fresh asparagus, trimmed
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup grated Parmesan cheese
- 1 teaspoon lemon zest (optional)
- 1 clove garlic, minced (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Trim asparagus and pat dry.
- Place on a baking sheet and drizzle with olive oil. Sprinkle salt and pepper. Toss gently.
- Add minced garlic if using.
- Roast for 12–15 minutes, shaking the pan halfway through.
- Sprinkle Parmesan in the last 2–3 minutes of roasting.
- Optional: finish with lemon zest before serving.
Notes
Don’t overcrowd the pan for even roasting. Parmesan melts best when added near the end. Store leftovers in an airtight container up to 3 days. Reheat in the oven, not microwave, to maintain crispiness.
