Description

Fresh, bright, and flavorful Rotisserie Lemon Chicken Salad! Shredded rotisserie chicken tossed with crisp greens, cherry tomatoes, cucumber, avocado, and a zesty lemon dressing. Perfect for light lunches or quick dinners, this salad is healthy, easy, and delicious.


Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, thinly sliced
  • 1 ripe avocado, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tbsp toasted almonds or pine nuts (optional)
  • 3 tbsp extra virgin olive oil
  • Juice of 1 large lemon
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and black pepper to taste

Instructions

  1. Shred rotisserie chicken into bite-sized pieces. Warm if desired.
  2. Mix greens, cherry tomatoes, cucumber, avocado, and red onion in a large bowl.
  3. Whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper for dressing.
  4. Drizzle dressing over salad and toss gently to coat.
  5. Add shredded chicken on top; sprinkle feta and nuts if using.
  6. Toss lightly again or leave toppings on top for presentation.
  7. Serve immediately.

Notes

Use warm chicken for better flavor absorption. Adjust lemon and honey to taste. Keep avocado and dressing separate if making ahead. Optional nuts or feta add extra texture and flavor.
