- 1/4 cup crumbled feta cheese (optional)
- 2 tbsp toasted almonds or pine nuts (optional)
- 3 tbsp extra virgin olive oil
- Juice of 1 large lemon
- 1 tsp Dijon mustard
- 1 tsp honey
- Salt and black pepper to taste
Instructions
- Shred rotisserie chicken into bite-sized pieces. Warm if desired.
- Mix greens, cherry tomatoes, cucumber, avocado, and red onion in a large bowl.
- Whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper for dressing.
- Drizzle dressing over salad and toss gently to coat.
- Add shredded chicken on top; sprinkle feta and nuts if using.
- Toss lightly again or leave toppings on top for presentation.
- Serve immediately.
Notes
