Description

This Rustic Apricot Galette is a free-form French-style dessert made with flaky buttery crust and juicy ripe apricots. Simple, rustic, and beautifully golden, it’s perfect served warm with ice cream or enjoyed on its own.


Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 115g cold butter
  • 35 tbsp ice water
  • 56 apricots
  • 2 tbsp sugar
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1 tbsp cornstarch
  • 1 egg

Instructions

  1. Mix flour, sugar, salt.
  2. Add butter and rub into crumbs.
  3. Add ice water to form dough.
  4. Chill dough 30 minutes.
  5. Mix apricots with sugar and lemon.
  6. Roll dough into circle.
  7. Add filling in center.
  8. Fold edges over fruit.
  9. Brush with egg wash.
  10. Bake 40 minutes until golden.

Notes

Keep butter cold for flaky crust. Use ripe apricots. Substitute with peaches or plums if needed.
