This Rustic Apricot Galette is a free-form French-style dessert made with flaky buttery crust and juicy ripe apricots. Simple, rustic, and beautifully golden, it’s perfect served warm with ice cream or enjoyed on its own.

- 1 1/4 cups all-purpose flour
- 1 tbsp sugar
- 1/2 tsp salt
- 115g cold butter
- 3–5 tbsp ice water
- 5–6 apricots
- 2 tbsp sugar
- 1 tbsp honey
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 1 tbsp cornstarch
- 1 egg
Instructions
- Mix flour, sugar, salt.
- Add butter and rub into crumbs.
- Add ice water to form dough.
- Chill dough 30 minutes.
- Mix apricots with sugar and lemon.
- Roll dough into circle.
- Add filling in center.
- Fold edges over fruit.
- Brush with egg wash.
- Bake 40 minutes until golden.
Notes
Keep butter cold for flaky crust. Use ripe apricots. Substitute with peaches or plums if needed.
