Description

Rustic Cherry Clafoutis is a warm, comforting French-inspired dessert made with juicy cherries baked in a soft vanilla custard. I love how simple ingredients transform into something elegant and rustic, perfect for breakfast, brunch, or dessert.


Ingredients

  • 300g fresh cherries (pitted)
  • 3 large eggs
  • 100g granulated sugar
  • 1 tbsp vanilla extract
  • 120g all-purpose flour
  • 250ml whole milk
  • 30g melted butter
  • 1 pinch salt
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 180°C and butter baking dish.
  2. Spread cherries evenly in dish.
  3. Whisk eggs and sugar until light and fluffy.
  4. Add vanilla and melted butter.
  5. Mix in flour and salt.
  6. Gradually add milk and whisk until smooth batter forms.
  7. Pour batter over cherries.
  8. Bake for 35–40 minutes until golden and puffed.
  9. Cool slightly and dust with powdered sugar before serving.

Notes

Let the batter rest for 10 minutes for a smoother texture. You can replace cherries with blueberries or plums. Best served warm. Store in fridge up to 3 days and reheat gently in oven.
