- 1 1/4 cups all-purpose flour
- 1/2 cup cold butter
- 1/4 tsp salt
- 1 tbsp sugar
- 3–5 tbsp ice water
- 2 cups strawberries
- 2 tbsp sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 1/2 tsp vanilla
- 1 egg
Instructions
- Mix flour, sugar, and salt.
- Cut in cold butter until crumbly.
- Add ice water to form dough.
- Chill dough for 30 minutes.
- Mix strawberries, sugar, cornstarch, lemon juice, and vanilla.
- Roll dough into a circle.
- Add filling to center.
- Fold edges over filling.
- Brush with egg wash.
- Bake until golden and bubbling.
Notes
Keep butter cold for flaky crust. Do not overfill. Best served warm with ice cream. Can substitute strawberries with berries or peaches.
