- 1 pie crust
- 1 bunch fresh asparagus, chopped
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup whole milk
- 1 cup shredded Gruyère cheese
- 1/2 onion, finely chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 tablespoon fresh parsley
Instructions
- Preheat oven to 180°C (350°F).
- Place pie crust in a 9-inch pie dish.
- Heat olive oil in a skillet and sauté onion until soft.
- Add asparagus and cook 2–3 minutes.
- Whisk eggs, cream, milk, salt, pepper, and nutmeg.
- Sprinkle half the cheese on the crust.
- Add asparagus mixture.
- Pour egg mixture into the crust.
- Top with remaining cheese.
- Bake 35–40 minutes until set and golden.
- Cool slightly before slicing.
Notes
Use fresh asparagus for the best flavor. Gruyère cheese provides classic flavor but cheddar works well too. This quiche can be made ahead and stored in the refrigerator for up to four days.
