Ingredients

  • 3 very ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup sugar (brown sugar preferred)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • Optional: 1/2 teaspoon ground cinnamon
  • Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

  1. Preheat oven to 175°C (350°F) and prepare a 9×5-inch loaf pan.
  2. Mash bananas in a large bowl; leave a few small lumps.
  3. Stir in melted butter, then mix in sugar, beaten egg, and vanilla.
  4. Add baking soda, salt, and gently fold in flour; do not overmix.
  5. Fold in optional cinnamon, walnuts, or chocolate chips.
  6. Pour batter into pan, smooth top, and bake 60–65 minutes.
  7. Cool in pan 10 minutes, then transfer to a wire rack.
