Ingredients

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 2 tbsp sugar
  • 600g cream cheese, softened
  • 150g caster sugar
  • 2 tsp vanilla extract

  • 150ml sour cream

Instructions

  1. Preheat oven to 160°C (320°F).
  2. Mix crushed biscuits, sugar, and melted butter; press into springform pan. Chill 10 minutes.

  4. Mix in eggs one at a time, then stir in sour cream.
  5. Pour over crust and smooth. Bake 45-50 minutes.
  6. Let cool in oven 10 minutes, then refrigerate 4+ hours until set.
