- 100g unsalted butter, melted
- 2 tbsp sugar
- 600g cream cheese, softened
- 150g caster sugar
- 2 tsp vanilla extract

- 150ml sour cream
Instructions
- Preheat oven to 160°C (320°F).
- Mix crushed biscuits, sugar, and melted butter; press into springform pan. Chill 10 minutes.
- Beat cream cheese until smooth, add sugar and vanilla.
- Mix in eggs one at a time, then stir in sour cream.
- Pour over crust and smooth. Bake 45-50 minutes.
- Let cool in oven 10 minutes, then refrigerate 4+ hours until set.
