Description

This Simple Gluten Free Strawberry Shortcake Dessert is a cozy, easy-to-make treat with tender shortcake, juicy strawberries, and light whipped cream. Perfect for family gatherings or a special weekday treat, it’s gluten-free without sacrificing flavor.


Ingredients

  • 1 ¾ cups gluten-free all-purpose flour
  • ¼ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, cold and cubed
  • ¾ cup milk
  • 1 tsp vanilla extract
  • 3 cups fresh strawberries, hulled and sliced
  • 23 tbsp sugar
  • 1 tsp lemon juice
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Combine strawberries with sugar and lemon juice. Let sit 30 mins.
  2. Preheat oven to 200°C (400°F). Mix flour, sugar, baking powder, salt.
  3. Cut in butter until crumbly. Stir in milk and vanilla. Spread in greased 8×8-inch dish.
  4. Bake 20–25 mins. Cool completely.
  5. Whip cream with powdered sugar and vanilla until soft peaks form.
  6. Layer crumbled shortcake, strawberries, and whipped cream in a dish or cups.
  7. Chill 1 hour. Serve cold with extra strawberries on top.

Notes

Chill your bowl and cream for fluffier whipped cream. Macerate strawberries to enhance sweetness. Gluten-free flour blends vary — choose one with xanthan gum for best texture. Make ahead by prepping shortcake and strawberries; whip cream before assembling.
