Description

Ingredients

  • 2 chicken breasts, cubed
  • 1 medium zucchini, spiralized
  • 1 cup cauliflower rice
  • 1 red bell pepper, diced
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper, to taste
  • ½ avocado, sliced for garnish
  • Fresh parsley, chopped

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Toss chicken and vegetables with olive oil, garlic, paprika, salt, and pepper.
  3. Spread on a baking tray and roast for 20–25 minutes until chicken is cooked.
  4. Sauté cauliflower rice in a skillet with a pinch of salt for 5–7 minutes.
  5. Combine roasted vegetables and chicken with cauliflower rice.
  6. Top with avocado slices and parsley.
  7. Serve immediately and enjoy.

Notes

Substitute chicken with shrimp, turkey, or tofu. Use other vegetables like spinach, mushrooms, or zucchini ribbons. Store leftovers in an airtight container for up to 3 days.
