Description

Ingredients

  • 2 tbsp extra virgin olive oil
  • ¼ cup freshly grated Parmesan cheese
  • 2 garlic cloves, minced
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • Zest of ½ lemon (optional)
  • 1 tsp balsamic glaze (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Trim asparagus and pat dry.
  3. Toss asparagus with olive oil, garlic, salt, and pepper.
  4. Arrange in a single layer on the baking sheet.
  5. Sprinkle parmesan evenly over asparagus.
  6. Roast 12–15 minutes until tips are golden and stalks tender.
  7. Optional: add lemon zest or balsamic glaze before serving.

Notes

Use fresh, firm asparagus for best results. Avoid overcrowding to ensure even roasting. Freshly grated parmesan crisps better than pre-shredded. Make ahead by tossing with oil and garlic; add parmesan right before roasting.
