Description

Ingredients

  • 6 cups fresh baby spinach leaves, washed and dried
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup sliced almonds, lightly toasted
  • 1/4 cup crumbled feta cheese (optional)
  • 1/3 cup mayonnaise
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon poppy seeds
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Wash and dry the baby spinach thoroughly.
  2. Hull and slice the strawberries evenly.
  3. Toast sliced almonds in a dry skillet for 3–5 minutes until golden.
  4. Whisk together mayonnaise, honey, apple cider vinegar, poppy seeds, Dijon mustard, salt, and pepper.
  5. In a large salad bowl, toss spinach, strawberries, and feta.
  6. Drizzle dressing over the salad and toss gently.
  7. Sprinkle toasted almonds on top and serve immediately.

Notes
