Description

This Slow Cooker Beef Chili is a cozy, heartwarming dish perfect for family dinners. Ground beef, beans, peppers, and tomatoes simmer with spices for a rich, comforting flavor. Simple to make and full of love, it’s ideal for busy days or meal prep.


Ingredients

  • 1 lb (450 g) ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cans (400 g each) chopped tomatoes
  • 1 can (400 g) kidney beans, drained and rinsed
  • 1 can (400 g) black beans, drained and rinsed
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 tsp brown sugar (optional)

Instructions

  1. Sauté onion and garlic in olive oil until soft.
  2. Brown the ground beef and drain excess fat.
  3. Transfer beef to slow cooker.
  4. Add tomatoes, tomato paste, broth, beans, bell peppers.
  5. Stir in all spices and brown sugar.
  6. Cook on low 6–8 hours or high 3–4 hours.
  7. Taste and adjust seasoning before serving.

Notes

  • Brown beef for richer flavor.
  • Add a splash of red wine or balsamic for depth.
  • Mash a few beans for a thicker consistency.
  • Stores 4 days in fridge, freezes 3 months.
