Description

This Small-Batch Strawberry Compote is a quick, sweet, and cozy topping perfect for pancakes, yogurt, oatmeal, or desserts. Made with fresh strawberries, a touch of sugar, lemon juice, and vanilla, it’s a simple recipe that brings warmth, love, and nostalgia to any meal.

Ingredients

Scale
  • 1 cup fresh strawberries, hulled and halved
  • 2 tablespoons granulated sugar
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon pure vanilla extract
  • Optional: 1 teaspoon chia seeds

Instructions

  1. Place strawberries, sugar, and lemon juice in a small saucepan over medium heat.
  2. Stir gently until sugar dissolves and berries release their juices.
  3. Simmer for 5–7 minutes, stirring to avoid burning.
  4. Remove from heat, stir in vanilla extract.
  5. If using chia seeds, add now and let sit 5 minutes to thicken.
  6. Taste and adjust sweetness if necessary. Serve warm or cold.

Notes

Use ripe, juicy strawberries for best flavor. Lemon juice balances sweetness naturally. Store in the fridge up to 5 days or freeze in small portions.
