These soft strawberry sugar cookies are tender, sweet, and full of real strawberry flavor. Perfect for gifting, afternoon tea, or cozy snacking, each bite is a little moment of joy.

- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup fresh strawberry puree
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- Optional: 1/4 cup white chocolate chips
Instructions
- Cream butter and sugars until fluffy.
- Add egg, vanilla, and strawberry puree; mix well.
- Whisk dry ingredients separately and fold in.
- Fold in optional white chocolate chips.
- Chill dough 20–30 minutes.
- Scoop dough into 1 1/2-tablespoon balls on lined baking sheet.
- Bake 350°F (175°C) for 10–12 minutes.
- Cool 5 minutes, transfer to wire rack.
Notes
Use very ripe strawberries for best flavor. Don’t overmix flour to keep cookies soft. Store in airtight container 3 days or freeze dough for later use.
