Description

This Spring Pea Salad with Feta is fresh, vibrant, and full of flavor. Sweet peas, crumbled feta, red onion, and fresh herbs come together with a simple lemon-olive oil dressing for a healthy and delicious dish.


Ingredients

  • 300g fresh or frozen peas
  • 100g feta cheese, crumbled
  • 1 small red onion, finely sliced
  • 50g baby spinach or mixed greens
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • Optional: toasted pine nuts or walnuts

Instructions

  1. Blanch frozen peas for 2 minutes; cool under cold water.
  2. In a large bowl, combine peas, greens, onion, and herbs.
  3. Crumble feta over the salad.
  4. Whisk olive oil, lemon juice, salt, and pepper in a small bowl.
  5. Pour dressing over salad and toss gently.
  6. Optional: sprinkle toasted nuts or seeds on top.
  7. Serve immediately or chill briefly to meld flavors.

Notes

Keep dressing separate if storing ahead. Toss gently to prevent feta from breaking. Use fresh herbs for best flavor. Add nuts for texture.
