Celebrate spring with this fresh Spring Strawberry Spinach Salad with Poppy Seed Dressing! Sweet strawberries, tender baby spinach, crunchy toasted almonds, and a creamy homemade poppy seed dressing create the perfect vibrant salad for family meals or brunch.


Ingredients

  • 6 cups baby spinach
  • 2 cups strawberries, sliced
  • ½ cup sliced almonds, toasted
  • ½ cup crumbled feta (optional)
  • ½ small red onion, thinly sliced
  • 1 cup cucumber, sliced
  • ½ cup Greek yogurt
  • 3 tbsp honey
  • 2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 1 tbsp poppy seeds
  • ½ tsp Dijon mustard
  • Pinch of salt

Instructions

  1. Wash and dry spinach.
  2. Slice strawberries evenly.
  3. Toast almonds until golden.
  4. Whisk Greek yogurt, honey, vinegar, olive oil, poppy seeds, Dijon mustard, and salt to make dressing.
  5. In a bowl, combine spinach, strawberries, onion, cucumber, almonds, and feta.
  6. Drizzle dressing over salad and toss gently.
  7. Serve immediately.

Notes

Toast almonds for enhanced flavor. Make dressing ahead and refrigerate. Assemble just before serving to keep greens fresh. Substitute walnuts or pecans if desired.
