- 6 cups baby spinach
- 2 cups strawberries, sliced
- ½ cup sliced almonds, toasted

- ½ small red onion, thinly sliced
- 1 cup cucumber, sliced
- ½ cup Greek yogurt
- 3 tbsp honey
- 2 tbsp apple cider vinegar
- 2 tbsp olive oil
- 1 tbsp poppy seeds
- ½ tsp Dijon mustard
- Pinch of salt
Instructions
- Wash and dry spinach.
- Slice strawberries evenly.
- Toast almonds until golden.
- Whisk Greek yogurt, honey, vinegar, olive oil, poppy seeds, Dijon mustard, and salt to make dressing.
- In a bowl, combine spinach, strawberries, onion, cucumber, almonds, and feta.
